Domaine Pacory is located in a new appellation, Poire Domfront, in the southern part of Normandy where pears are king. The planted meadows are made up of apple and pear trees that are up to three hundred years old. This fresh and fruity pear cider is truly delicious, slightly off-dry, and perfect as a palate cleanser or on its own.
Made from 100% Plant de Blanc pears; the pears are stocked in wooden boxes for 36 hours after harvest to further mature. Naturally fermented for 3 months; after several rackings, the poiré is stored upside down in bottles with crown caps and not disgorged. A beguilingly dank nose leads to a creamy palate balanced with relaxed acidity and a touch of green herbs, hay, and yeasty, farmhouse funk.
