Ramato means coppery and that is how Pinot Grigio looks when it is given a brief period on the skins, it is not an all-out red grape but it does have a fair bit of colour. The grapes are handpicked from the Fontane vineyard on the Campo Rotaliano from vines planted at a lowish density of 3300 plants per hectare. The grapes start their fermentation on the skins and after 12 hours the fermenting wine is decanted into a fresh steel tank where it completes fermentation at a controlled temperature. The wine does not go through malolactic fermentation as freshness and primary aromas is what the family are after. A very pale rosé, faint berry aromas, lovely cherry and strawberry fruit and beautifully mineral on the finish.
